SUMMER / FALL 2015

In the winter, the Fairmont Snow School gives
guests exclusive access to the slopes. The best ski
instructors in the world offer customized, expert
instruction for individuals, groups or families. Guests
can choose to enjoy their lessons at three Banff
snow resorts and the sessions even include special
lift-line priority.
The resort’s vast menu of other active options will
impress as well. Indoors, the bowling center is fun for
the whole family. The outdoor surroundings offer up
nature walks and hikes led by interpretive guides, ice-
skating in the winter, five tennis courts and horseback
riding at The Fairmont Banff Springs Corral. Riders
can follow trails along the Bow River and visit Bow
Falls and the scenic Spray Valley.
For a real reprieve, the award-winning Fairmont
Banff Springs Willow Stream Spa is a pure sanctuary.
Rejuvenated from its recent multi-million dollar
renovation, the 38,000-square-foot spa is abundant
with soothing waterfalls, European mineral pools,
a state-of-the-art fitness center and the latest
therapeutic treatments featuring the best in health
and wellness. For a sample of the spa’s trademark
blissful indulgence, try the Willow Stream Elements
treatment. Inspired by the elements, guests are
nurtured with a detoxifying mud wrap (earth),
relaxing aromatherapy (air), cleansing mineral bath
(water) and an invigorating, warm massage (fire).
Wining and Dining
True to form, The Fairmont Banff Springs serves up
a feast of regal restaurant choices. A total of 12
seasonal eateries deliver gourmet fare ranging from
healthy cuisine to hearty, regional specialties. Guests
can first whet their palettes at the “Cause and Effect”
wine and food tasting. Led by the resort’s sommelier
and culinary team, the epicurean adventure features
single malt Scotch, four styles of Cabernet, three
different kinds of sherry, and superb Canadian wines
paired with tantalizing, savory-sized dishes.
For their main meal, guests have ample choices.
The old-world European charm (and cuisine) of the
80-year old Waldhaus Restaurant is a winner. Set in
a Bavarian-style cottage with rich, dark-wooded
interiors and a large crackling fireplace, the restaurant
serves dishes like venison ragout, wiener schnitzel,
Swiss fondue and goulash.
Newly opened this past December, 1888 Chop
House is the next chapter in the tradition of fine
dining restaurants at the Castle. Executive Chef jW
Foster presents a modern twist on the authentic chop
house with a menu focused on prime cuts of Alberta
beef, sustainably sourced wild game and Ocean Wise
seafood. A culinary destination for all occasions, guests
can settle in with friends or pull up a seat at the
intimate bar and allow the mixologist to entertain them.
