The hotel’s 2,400-square-foot La Casona House is
an ideal venue for corporate summits and glamorous
destination weddings. It features three rooms, a
terrace, courtyard, state-of-the-art audiovisual
equipment, catering and event planning services.

Wining and Dining
Wining and dining at Billini Hotel is a memorable
experience that incorporates all the senses — the
vibrant colors of the craft cocktails with hand-
muddled fruit, the aromas of herbs and spices in the
dishes, and the artful food presentation highlighted
with colorful swirls and drips of sauces. There are
intimate spaces to set the scene, stunning panoramic
views of the preserved Old World buildings and
attentive service from the impeccably trained staff.
The hotel’s theme of modern-elegance-meets-
historic-authenticity is integrated through the
restaurants and bars with styling cues such as antique
wood used in modern furniture designs. Traditional
Dominican dishes are re-imagined and presented in
surprisingly artful ways.
The Dominican breakfast with eggs, mashed
plantains, fried cheese and steaming locally harvested
coffee starts the morning in style at Castil Restaurant.
Sunday Brunch is especially popular.
Cocktails with Dominican rum and tropical fruit
are a standout experience at the poolside bar while
lounging at the pool and soaking in the expansive
rooftop view. Alternatively, the Bar entices with
creative cocktails, a large selection of rare single malt
whiskies and an elegant atmosphere.
In the evening, guests can choose an exquisite
bottle of wine from the extensively stocked wine
cellar to enjoy while watching the sun set over the
historic city and iconic 500-year-old cathedral at El
Higuero dining terrace. Spanish tapas is an excellent
accompaniment to an Old World wine.
Castil Restaurant has a romantic setting with
450-year-old columns unearthed on the site and
incorporated into the chic design. Dining is a fusion
of global flavors with innovative flair. One of the
signature dishes is wild Caribbean sea bass caught by
local fishermen.
With 24-hour room service, guests can experience
breakfast in bed or dining on their private terrace.
The Owner’s Suite has a dining room and rooftop
terrace, perfect for entertaining.
